Ok, no one panic.
Biscuits are not that hard. A few
tips before we get started. Make sure
that your flour is self-rising OR add about a tablespoon of baking powder to
help keep your biscuits from being hockey pucks. On other thing to keep in mind is that if you
are going to use salted butter do not salt the flour, if you’re using unsalted
butter, add about a ½ teaspoon to the dry ingredients.
I’m going to show you a basic white cheese biscuits; you can
leave out the cheese and make some gravy.

Ingredients
2 Cups Self-Rising
Flour
8 tsps. Salted
Butter
½ cup Milk
Block of White
Cheese
Process
Slice about six thick slices of the cheese
Start with 2 Cups of flour in a bowl

Chop the 8 teaspoons of butter into little pieces about the size
of a pea; add this to the bowl of flour
Use your fingers to incorporate the butter into the flour, a
little at a time add the milk to the flour mixture.

Using your hands mix the two together until it forms a soft
dough, if it gets crumbly, just add more milk a little at a time until it's smooth.

Roll the dough a few times until it is no longer “sticky”

Pinch off the ends of the biscuit and form into round biscuits

Place into a baking dish and pop in a 350 degree preheated
oven

After about 10 minutes check the bottoms to see if they are
brown, if so remove the pan from the oven and carefully split them open.

Add the sliced cheese and put back in the
oven.
Keep a watch on the biscuits and remove when the cheese is
melted

I will definitely be trying this. If my kitchen had a title it would be International House of Hockeypucks. I cannot make bisquits to save my life. I will attempt these and see if I can turn them into hockey pucks. LOL.
I had that issue before too... you have to be sure your flour is self rising and is fresh. Self rising flour has baking powder added to it. That allows them to rise and stay light and fluffy. You can always add some baking powder directly to all purpose flour to create your own. 1 cup of self-rising flour contains 1 teaspoon of baking powder and 1/2 teaspoon of salt. I would just watch the salt if you're using salted butter.
