Meatless Monday - Biscuits & Gravy with Eggs




This recipe incorporates a previous recipe that I shared last year.  My Cheddar-Roo  Biscuit recipe is used; just leave out the part about adding the cheese.  We’re going to finish the baking on the biscuits and let them rest on the counter until we've finished the gravy and eggs.

Gravy
Ingredients
2 tbsp. butter
4 tbsp. flour
1 1/2 cup milk
Salt & Pepper to taste


Process
In a heavy skillet melt the butter over medium heat
Add the flour and stir constantly; you can use a whisk for this
Be sure to get all the lumps out
Careful not to brown the rue
After about 5 minutes add your milk and whisk
The gravy will thicken; add more milk a little at a time to achieve the consistency you’re looking for.
Many people use a lot of pepper in this type of gravy, in fact sometimes its called pepper gravy.  I don’t care for pepper so I just add a bit.
Remove from heat and set to the side
Scramble two eggs per person in a frying pan and set to the side.

Assembly
Split the biscuit in half and set on the plate.
Add the scrambled eggs to the biscuit halves.

This is one of my all-time favorites.  For breakfast lunch or dinner this is a great recipe to have handy.  Take those extra biscuits and toss them in the freezer.  They're great for making stuffing, breadcrumbs, or if you cut them in 1/2 before you freeze them, they'll fit right in a toaster oven!   I hope you enjoy!

Meatless Monday - Homemade "Cheddar Roo" Biscuits


Ok, no one panic.  Biscuits are not that hard.  A few tips before we get started.  Make sure that your flour is self-rising OR add about a tablespoon of baking powder to help keep your biscuits from being hockey pucks.  On other thing to keep in mind is that if you are going to use salted butter do not salt the flour, if you’re using unsalted butter, add about a ½ teaspoon to the dry ingredients.

I’m going to show you a basic white cheese biscuits; you can leave out the cheese and make some gravy.  It’s a very easy recipe.

Ingredients
2 Cups Self-Rising Flour
8 tsps. Salted Butter
½ cup Milk
Block of White Cheese

Process
Slice about six thick slices of the cheese
Start with 2 Cups of flour in a bowl

Chop the 8 teaspoons of butter into little pieces about the size of a pea; add this to the bowl of flour
Use your fingers to incorporate the butter into the flour, a little at a time add the milk to the flour mixture.

Using your hands mix the two together until it forms a soft dough, if it gets crumbly, just add more milk a little at a time until it's smooth.

Roll the dough a few times until it is no longer “sticky”

Pinch off the ends of the biscuit and form into round biscuits

Place into a baking dish and pop in a 350 degree preheated oven

After about 10 minutes check the bottoms to see if they are brown, if so remove the pan from the oven and carefully split them open.

Add the sliced cheese and put back in the oven.
Keep a watch on the biscuits and remove when the cheese is melted

I really love making things from scratch.  Sure I could use canned biscuits but just look at the ingredients:






My biscuits have:
Flour
Milk
Butter – Cream and salt
Check your labels, if it has things like MSG, HFCS or “Modified” items you’ll want to avoid it.
